Jack and I attended this event hoping to be able to do more active cultural work in Baguio-Benguet. It wasn't bad that we didn't end up talking that much about Baguio. It paid that the mayor of Kibungan and his daughter, a UP-Baguio graduate, were in attendance.

They caught the best result.

"Kitten Fajitas"

The trick to a good fajita is to marinate your meat well beforehand, to let the flavours infuse and to add succulence to a cheap bit of meat.

Kittens are a dime a dozen at the moment, you can pick up a handful of them for a couple of quid and, for that authentic Mexican flavour, they really have no equal.

Fuck the Old El Paso way, my fajita recipe is simple, natural and doesn't taste like utter shite. Slice the hottest chillis you can find lengthways and shove them up the kittens bum (you might need to use some sort of pipe to get them in). Rub chilli, garlic and lime juice into its eyes. This is a incredibly effective way of getting flavour straight into the bloodstream.

You can do this for several days prior to eating for maximum flavour. The minimum soaking time is two hours.

When you're ready, skin and gut the cat, slice thinly and cook briskly on a hot griddle with peppers and onions.

Serve with the usual gubbins and as much tequila as you can manage. Aproveche!
